Rice Krispies Treats Ice Cream

These warmer spring days call for a refreshing, fun snack! Whip together a few simple ingredients to create this creamy, crispy Rice Krispies Treats Ice Cream for the perfect afternoon treat! 


I used to firmly declare fall as my favorite time of year. The crisp, cooler days, the colorful leaves, all of the fun holidays and celebrations (Halloween, Thanksgiving, my birthday), the tasty, seasonal fall produce…. I absolutely love it all!

However, the past few weeks I have fallen in love with spring! I have always had a few fond memories of spring, a few spring/Easter break vacations from my childhood to see the cherry blossoms in D.C., skiing in Utah and an annual trip to San Antonio, dying Easter eggs, playing at a few different local parks, the anticipation of summer break… but despite these happy memories spring was not my absolute favorite.

That is until now. I can’t get over the absolutely gorgeous spring days we have had the past week. And despite the fact that spring break (a few weeks ago) was wet and rainy, it was almost like magic that the next day, the sun popped out and so did all the marvelous Texas wildflowers including the beautiful bluebonnets.

This weather and the beauty all around me makes me want to spend every single moment outside, soaking it all in before the summer heat sets in (which unfortunately will be here soon). To soak up as much spring time as possible, we have spent hours at the dog park, taking evening walks around our neighborhood, and cooking nightly on the grill.

Since moving into our new house and the recent time change, sitting on our back porch and cooking on our new grill has become our favorite pass time. And for me a backyard barbecue wouldn’t be complete without a little sweet treat to finish the night off. Since my favorite treat for during the warmer months is ice cream, I have been itching to whip up my first batch as soon as we had our first 75 degree spring day.

Recently when running errands on a warm afternoon, I decided it was about time to bust out the ice cream maker. With ice cream and backyard barbecues on my mind, I was inspired to make Rice Krispies Treats Ice Cream when I saw a big box of these favorite snacks while at Walmart.

We absolutely loved creating this ice cream and sharing it with some friends at one of our regular barbecues! This marshmallow flavored ice cream is sweet and creamy and is loaded with crispy, Rice Krispies Treats and is sure to be a hit all spring and summer long!

Rice Krispies Treats Ice Cream

Prep Time: 30-40 minutes Cook Time: 15 minutes Chill Time: 8+ hours Yields: approximately 1 quart 

Homemade marshmallow ice cream packed with crispy, chewy Rice Krispies Treats!

Ingredients:
1 (10-ounce) package JET-PUFFED Miniature Marshmallows
1 ½ cups whole milk
1 ½ cups heavy whipping cream
1/3 cup granulated sugar
1/8 teaspoon salt
2 teaspoons vanilla
1 whole egg
2 egg yolks
5-6 (.78-ounce) packages Rice Krispies Treats, chopped (plus more for topping)

Directions:
Preheat broiler and line a large baking sheet with parchment paper. Spray parchment paper with cooking spray. Spread marshmallows in an even layer on top of parchment paper and place under broiler. Broil for 2-3 minutes or until puffed and starting to brown, being careful not to burn. Set aside.

In a medium-sized saucepan, bring the milk, cream and sugar to a simmer over medium-low heat. Whisking constantly, simmer for 5 minutes or until sugar is fully dissolved.

Meanwhile, in a large bowl whisk together egg and egg yolks, until well combined. Slowly beat the hot milk mixture into the whisked eggs, pouring the hot milk slowly and whisking constantly to ensure the eggs do not scramble. Pour the custard mixture back into the sauce pan and bring to a simmer over low heat. Whisk constantly until the custard thickens slightly, about 5-6 minutes; being careful not to let the mixture come to a boil.

Remove from the heat, stir in vanilla and pour custard through a fine mesh strainer into a large bowl. Carefully stir in the toasted marshmallows. Allow the custard/marshmallow mixture to cool slightly then transfer to a blender. Blend for 30 seconds to 1 minute, or until marshmallows are fully incorporated.

Place strainer over a large bowl or food storage container. Pour custard through strainer into the bowl and cover tightly. Refrigerate custard for 4-6 hours or overnight.

After refrigeration, stir chilled custard. Churn custard in ice cream maker according to manufacturer’s instructions, for about 20-25 minutes, or until the ice cream is soft serve consistency. Fold in the chopped Rice Krispies Treats. Transfer ice cream to a freezer-safe container and freeze for at least 4 hours before serving.

Serve topped with additional chopped Rice Krispies Treats, if desired.
